鳥(niao)(niao)苷(gan)酸(suan)(suan)(suan) guanylic acid,guanosine monophosphate 亦稱一(yi)磷酸(suan)(suan)(suan)鳥(niao)(niao)苷(gan),簡(jian)稱GMP。是RNA的(de)組成(cheng)(cheng)成(cheng)(cheng)分。堿解RNA得到的(de)GMP是2′-磷酸(suan)(suan)(suan)鳥(niao)(niao)苷(gan)和(he)(he)3′-磷酸(suan)(suan)(suan)鳥(niao)(niao)苷(gan)的(de)混合物。用(yong)稀(xi)酸(suan)(suan)(suan)水解GMP可(ke)生(sheng)(sheng)成(cheng)(cheng)鳥(niao)(niao)嘌呤、D-核(he)酸(suan)(suan)(suan)和(he)(he)磷酸(suan)(suan)(suan)。用(yong)蛇毒磷酸(suan)(suan)(suan)二酯(zhi)酶處(chu)理RNA生(sheng)(sheng)成(cheng)(cheng)5′-磷酸(suan)(suan)(suan)鳥(niao)(niao)苷(gan)。在(zai)生(sheng)(sheng)物體內由次(ci)黃苷(gan)酸(suan)(suan)(suan)生(sheng)(sheng)成(cheng)(cheng),此外也由鳥(niao)(niao)嘌呤或鳥(niao)(niao)苷(gan)生(sheng)(sheng)成(cheng)(cheng)。《食品添加劑使用(yong)衛(wei)生(sheng)(sheng)標(biao)準》規(gui)定:5’-鳥(niao)(niao)苷(gan)酸(suan)(suan)(suan)二鈉用(yong)于(yu)醬油、調味(wei)料(liao)生(sheng)(sheng)產中(zhong),用(yong)量(liang)視正常生(sheng)(sheng)產需要(yao)而(er)定。按(an)FAO/WHO規(gui)定,5’-鳥(niao)(niao)苷(gan)酸(suan)(suan)(suan)二鈉可(ke)用(yong)于(yu)午餐肉、火腿(tui)、咸(xian)肉等腌制肉類(lei), 允許用(yong)量(liang)為0.5g/kg
⒈使用注意事(shi)項(xiang):
⑴該品與谷氨酸鈉(na)或5′-肌苷酸二鈉(na)并用(yong),有顯(xian)著的(de)協同作(zuo)用(yong),鮮味大增。
⑵該品可(ke)被磷酸酶(mei)分解失去呈味力,故不(bu)宜(yi)用(yong)于生(sheng)鮮食(shi)品中。這可(ke)通(tong)過將食(shi)品加熱到85℃左右(you)鈍(dun)化酶(mei)后使用(yong)。
【用(yong)(yong)(yong)(yong)法(fa)及用(yong)(yong)(yong)(yong)量(liang)(liang)(liang)(liang)】 1. 本品(pin)(pin)(pin)(pin)與(yu)谷(gu)氨(an)酸(suan)(suan)(suan)(suan)鈉(na)(na)(na)或(huo)5’-肌苷酸(suan)(suan)(suan)(suan)二鈉(na)(na)(na)合用(yong)(yong)(yong)(yong),有顯著的協同作用(yong)(yong)(yong)(yong),鮮(xian)味(wei)大增。 2. 本品(pin)(pin)(pin)(pin)可被(bei)磷(lin)酸(suan)(suan)(suan)(suan)酶(mei)分解(jie)失(shi)去呈(cheng)味(wei)力,故不宜(yi)用(yong)(yong)(yong)(yong)于(yu)生鮮(xian)食(shi)(shi)品(pin)(pin)(pin)(pin)中。這可通過將食(shi)(shi)品(pin)(pin)(pin)(pin)加(jia)熱到85℃左右鈍化酶(mei)后使(shi)(shi)用(yong)(yong)(yong)(yong)。 3. 本品(pin)(pin)(pin)(pin)通常很少單獨使(shi)(shi)用(yong)(yong)(yong)(yong),可多與(yu)谷(gu)氨(an)酸(suan)(suan)(suan)(suan)鈉(na)(na)(na)(味(wei)精)等(deng)合用(yong)(yong)(yong)(yong)。混合使(shi)(shi)用(yong)(yong)(yong)(yong)時,其(qi)用(yong)(yong)(yong)(yong)量(liang)(liang)(liang)(liang)約為(wei)味(wei)精總(zong)量(liang)(liang)(liang)(liang)的1%~5%;醬油、食(shi)(shi)醋、肉、魚制品(pin)(pin)(pin)(pin)、速溶湯粉、速煮(zhu)面條及罐頭食(shi)(shi)品(pin)(pin)(pin)(pin)等(deng)均可添(tian)加(jia),其(qi)用(yong)(yong)(yong)(yong)量(liang)(liang)(liang)(liang)約為(wei)0.01~0.1g/kg。也可與(yu)賴氨(an)酸(suan)(suan)(suan)(suan)鹽酸(suan)(suan)(suan)(suan)鹽等(deng)混合后,添(tian)加(jia)于(yu)蒸(zheng)煮(zhu)米飯、速煮(zhu)面條、快餐中,用(yong)(yong)(yong)(yong)量(liang)(liang)(liang)(liang)約0.5g/kg。關于(yu)本品(pin)(pin)(pin)(pin)與(yu)谷(gu)氨(an)酸(suan)(suan)(suan)(suan)鈉(na)(na)(na)等(deng)的配(pei)合使(shi)(shi)用(yong)(yong)(yong)(yong),詳見谷(gu)氨(an)酸(suan)(suan)(suan)(suan)鈉(na)(na)(na)。 4. 本品(pin)(pin)(pin)(pin)尚可與(yu)肌苷酸(suan)(suan)(suan)(suan)鈉(na)(na)(na)以(yi)1:1配(pei)合,廣泛應用(yong)(yong)(yong)(yong)于(yu)各(ge)類(lei)(lei)食(shi)(shi)品(pin)(pin)(pin)(pin)。 用(yong)(yong)(yong)(yong)量(liang)(liang)(liang)(liang) 可在各(ge)類(lei)(lei)食(shi)(shi)品(pin)(pin)(pin)(pin)中按生產需要適(shi)量(liang)(liang)(liang)(liang)使(shi)(shi)用(yong)(yong)(yong)(yong);用(yong)(yong)(yong)(yong)于(yu)嬰幼(you)兒配(pei)方(fang)奶粉,使(shi)(shi)用(yong)(yong)(yong)(yong)量(liang)(liang)(liang)(liang)0.2~0.58g/kg。
